Hi! I'm Maddie's mama!

Inspired by the world's sweetest little girl, Maddie (aka. my little cupcake), I've summoned the kind of courage I never even knew I had, and decided to launch one of the greatest dreams of my life! You guessed it, A CUPCAKE BAKERY! Profoundly proud of our Asian root and the flavors I miss every single day, we decided to take it upon ourselves to specialize in Asian Fusion flavored cupcakes. Each of our cupcake flavor is designated to bring a piece of Asia into an adorable America's favorite dessert, A CUPCAKE!

Maddie and I are starting this amazing journey, this big magic inside our existing family restaurant on SE Morrison Street, in Portland, Oregon.The 6ft-long narrow hallway way between our staff room and the back exit is exactly where our quirky, whimsical, authentic and magical dream will take flight!

We prepare all our super fresh cupcakes before the sun rises each morning, with thoughtfully selected ingredients and a passion that doesn't make any sense to anyone but us. Then we decorate our signature square cupcakes according to YOUR instructions. That's right! You get to Build Your Own (BYO) cupcakes here in Maddie's Sphere!

WELCOM TO MADDIE'S SPHERE!

In May, 2025, a cupcake bakery will be born in the heart of Portland, Oregon.

It will be the 1st bakery in Oregon to exclusively serve up scratch-made cupcakes, pulled fresh out of the oven, moist, fluffy and bursting with nostalgic ASIAN flavors! It will be the 1st bakery in the US to offer a "bespoke" ordering experience to its customers. Pairing with a bold & entertaining approach to hospitality, it is set to change the way we gather and eat cake, forever.

It will be a cozy space thoughtfully designed to allow children to be children, and parents to simply, be. It will satisfy the sweet cravings and reasons to celebrate for all families residing in and near the Portland Metro area.

It's a company founded by 1st-generation immigrant woman, and run by a community of empowered American young women. We are bringing a magnificent movement to Portland through cupcakes, but beyond cupcakes. H.O.P.E. is the only ingredient we consistently stir into every recipe, for Portland, for America, and maybe one day, for the world!

It’s been such a fun ride so far having pop-up sales in our burger restaurant since December. I’ve lost count on how many 4am’s. (either getting up to bake cupcakes, or going to bed from baking cupcakes) We’ve rebranded and elevated our flavors; Maddie and I attended interviews after interviews for farmers markets, and was recently accepted by 3! (one on the waitlist)

We will soon be announcing the farmers market we will be appearing in, AND our GRAND LAUNCHING party that will take place on our first market day!!!

This week, Maddie and I interviewed for the Sellwood-Moreland Farmer’s Market. This market holds a very special place in my heart, because it was the very first farmer’s market I have ever sold cupcakes in back in 2018!!

It took me a long time to officially get on the right track (and by “track”, I mean mindset) to launch one of the greatest dreams of my life, but here we are today, asking for another opportunity to take yet another “first step” toward our cupcake dream! Stay tuned for which market we will be calling “home” this summer!

Goodbye 👋 2024! What a bang we’ve made going out in the month of December! We’ve sold over 100 cupcakes each pop-up, and grossed a revenue I could proudly present to investors and lenders in the new year.

Today, we wrap up MADDIE’S first ever pop-up event: a 3-weekend event during which we were able to offer 4 different holiday flavors. And we have:

For the past 3 weeks, I was Mrs. Hitthespot during business hours, and when our customers and staff had left, that’s when the founder of MADDIE’S came alive. I learned that custard doesn’t fold well with whipped cream, caramel goes from just right to bitterly burnt in half a second, if you top anything on a torched sugar shell, it soften to liquid, and an innocent star piping nuzzle could potential kill you if you shove your finger through while washing it! But above all…

I learned that baking is nonsense to me. I can lock all the doors, crank up the music, mix, fold, melt, pipe, in the back of our burger restaurant, where no one sees me or even know I’m there, yet I feel like such a star 🌟! I can be up at 7am with my daughter, knowing I’ll be up that time again the next day, but after everyone drove away at 9pm and I finally get to turn on the mixer, I feel so alive! I can be covered in chocolate and dangerously dehydrated, yet I feel like a queen making magic happen in our prepping area / hallway.

I love it so much it stopped making sense. The 2am walk home could not feel more glamorous! The passion that doesn’t make any sense, i finally found it. 🥹

After running out restaurant 6 days a week and late night baking for our Sunday Pop-ups, I’ve caught a serious case of fatigue earlier the is week, and I apologize for haven’t been able to get legit photography done for our upcoming cupcakes that will be awaiting you this Sunday!

After our amazing HTS team finishes closing up the restaurant, that’s when MADDIE’S kitchen is open and prepping for pop-up.

I started at 9pm with a cup of coffee and a fresh batch of confidence, only to be lost when the first batch of cupcakes came out of the oven and started sinking before my eyes. But I did manage to fix the problem and baked 98 cupcakes from 9p-3a.

This egg nog crème brûlée cupcake has been one difficult undertaking, and the end product has a lot to be improved on and perfected! Swing by our pop-up today between 11am and 8pm (or till sell out)! I thank you in advance for supporting this crazy dream of mine taking flight at the craziest time of our family’s lives! And thank you for allowing me to learn and grow!

I recently consulted someone on capital-raising, he said that I’m not ready to talk to any investors or lenders; he advised me to take some time to build records of sales. I said:
“How much time?”
He said: “Oh at least 6 months.”
I said: “ That’s too much time.”
He asked: “ Why?”
I paused cause I didn’t know how to answer that. I have no expertise on raising capital. My whole body just wanted to say: You are right, please tell me what to do. But something took over me; as if I blacked out.
And I said: “Because I’ve got this freight train the size of the Polar Express, carrying frosting and sprinkles, accelerating uncontrollably, on its way to deliver happiness to families all over Portland. And I’ve got this group of brilliant young women who are on board ready to conduct, lead and empower! MADDIE’S is not slowing down or stopping. I can’t even stop it myself. I can build record of sales, but 6 months is too much time.”

THANK YOU for showing up and showing love for the second day of Cocoa Cranberry Cupcake pop-up! I slept in today and woke up with my heart absolutely full🥰!

Shout out to Emma (we need to take a picture together next time) who came to our farmer’s market booth 3 years ago and patiently waited for me to gather the courage to start MADDIE’S in full swing! Thank you and your kind heart! Let’s make the most magical birthday cupcakes for you in July!

I really wanted to deliver on the moist, fluffy, freshly baked cupcake promise, but was afraid that I would sleep through my alarm ⏰. So I decided to burn the midnight oil.

The night before our first day of pop-up sale, I had a breakdown. My husband asked me what was wrong, and I blurred: “I’m not gonna finish all the cupcakes in time, and then everyone would know that I’m not good at anything!” Then I said: “The only thing I’m good at is to disappoint the people who believed in me!”

Then I remembered why I named my business after my daughter. So that I will learn to show her what it’s like to have faith in herself. I have a long way to go and so much to learn, but this is where we begin:)
